BBQ Chicken Wraps

Now that grilling season is officially upon us, it's time to break out my favorite grill recipes.  These chicken wraps are more of a suggestion for assembly, rather than a true recipe.  They're one of my favorite summer dinners and an awesome way to use up leftover chicken (grilled or not).  And the best part is just switch up the veggies and dressing to create a totally different taste. 


BBQ Chicken Wraps

1 pound boneless, skinless chicken breasts
1 cup your favorite BBQ sauce
1/2 cup shredded cheese
1 cup shredded lettuce (or more if you like alot of lettuce)
1/2 red medium onion, sliced thin
2 medium tomatoes, diced
6-8 tablespoons Italian dressing (my favorite is Kraft Roasted Red Pepper Vinagrette)
6-8 flour tortillas

1 - Grill chicken, basting with BBQ sauce until the internal temperature reaches 170 degrees
2 - Remove chicken from grill and let cool
3 - Once cooled, slice chicken breasts thin
4 - To assemble, warm a tortilla (on the grill or in the microwave for a few seconds) to soften
5 - Place 2-3 tablespoons lettuce, approx 1 tablespoon onion and 1 tablespoon tomato onto warmed tortilla
6 - Top with 1/6th (or 1/8th) of the sliced chicken and 2 tablespoons shredded cheese
7 - Drizzle with 2 tablespoons Italian dressing (or to taste)
8 - Roll it up burrito style and slice down the middle

  23. These look delicious, and I've been keeping my eye open for some healthy, easy summer meals. I love that you combined bbq sauce with italian dressing, which is a combo I would never have considered! I bet it tastes delicious! Great idea!
