Fried Chipped Ham
This recipe (cough cough) is a regional favorite. Growing up, both of my grandparents fried chipped ham on Sundays after church. If you were visiting either house for lunch on Sunday, you knew what was on the menu. At both houses, the sandwiches were served with a side of scallions, raw with salt and pepper.
While we certainly don't have these sandwiches every Sunday, I do try to make them a few times every year (especially in the fall). But at our house they're more likely to be served with chips than scallions.
Fried Chipped Ham Sandwiches
1 pound Islay's chip chopped ham, chipped
1/2 large sweet onion, sliced
1 tablespoon butter
1/2 teaspoon pepper
Italian bread, sliced into 1 inch (or more) slices
4 slices sharp cheddar cheese
1 - Add the butter and onions to a small saucepan over medium heat - add pepper and stir to combine
2 - Cook onions until softened and golden in color - not quite completely carmelized
3 - While onions are cooking, add ham to large skillet over medium heat. I don't use any butter or oil - the ham will render plenty of fat for the cooking.
4 - Cook ham until it just starts to brown, about 10 minutes, stirring every minute or so
5 - To assemble sandwiches, pile 1/4 ham on top of a slice of bread
6 - Smother ham with 1/4 of the onions and top with a slice of cheddar
7 - Repeat for 3 additional sandwiches

I need to know more about the scallions. You'd eat the green parts or white parts or all? Just raw? Seriously?!
ReplyDeleteHahahaha - I must start this by saying I did not eat the raw scallions. The thought of the crazy scallion breath sent shivers down my little-girl spine. Come to think of it, it sends shivers down my grown up spine too! As prepared by my grandparents...You cut the roots from the white part and only eat up to the green part.

ReplyDeleteOK this looks so yummy! My grandma ALWAYS had Scallions on a veggie tray and would just add a little salt and eat it! I LOVE onions too, but mine have to be cooked!
