Blackberry Filled Double Chocolate Cupcakes

Here's a sweet recipe sure to impress your Valentine...or coworkers...whatever the case might be.  Dark chocolate cupcakes filled with blackberry preserves and then topped with a sinful chocolate frosting.



Dark Chocolate Cupcakes

1 3/4 cups flour
2 cups sugar
3/4 cups cocoa
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon instant coffee granules
2 eggs
1 cup strong brewed coffee, cooled
1 cup buttermilk
1/2 cup vegetable oil
2 teaspoons vanilla extract


1 - Preheat oven to 350 degrees and prepare muffin liners
2 - In large mixing bowl, combine flour, sugar, cocoa, baking soda, baking powder and salt
3 - Mix together and create a well in the center
4 - Disolve instant granules into the coffee
5 - Add coffee, buttermilk, eggs, oil and vanilla to the dry ingredients (in the well)
6 - Beat for 2 minutes on medium speed - batter will be thin
7 - Fill muffin tins 2/3 full
8 - Bake for 25 minutes or until a toothpick inserted into the center comes out clean

Filling
Once cooled, fill each cupcake with blackberry preserves (or filling of your choice)
1 - Remove a cone shaped piece of cupcake
2 - Fill void almost full with preserves


3 - Cut bottom point off of the cone of cake
4 - Top with remaining cupcake piece








Double Chocolate Frosting


1/2 cup butter
1/2 cup cocoa
1/4 cup heavy cream (+ additional 2-4 tablespoons)
3 oz semi sweet chocolate
3 1/2 cups powdered sugar (1 pound)
1/2 teaspoon vanilla


1 - Combine butter, chocolate & cocoa in a small saucepan
2 - Cook over medium heat until butter is melted, stirring constantly
3 - Remove from heat
4 - Add sugar, vanilla and heavy cream
5 - Beat well until combined
6 - Add additional cream 1 tablespoon at a time until desired consistency is achieved
