Fresh Fruit 'Tartlets'

Sooo it's no secret that I love the Farmer's Market.  Fresh fruits and veggies - I'm yours!  And while I have this tasty breakfast recipe for using up a bounty of veggies.  This more-of-an-idea-than-a-recipe is my favorite way to use up lots of different fruits.  Because lets face it - I'm a total binge shopper at the Farmer's Market :)


 Fresh Fruit 'Tartlets'


2 premade pie crusts (oh yes, I totally cheat on this one)
4 juicy peaches, pitted and sliced (this ratio is 1/2 peach per tart)
1 tablespoon flour
4 teaspoons white sugar
4 teaspoons brown sugar


1 - preheat oven to 350 degrees
2 - split each pie crust into 4 equal parts


3 - sprinkle the flour onto the sliced peaches and stir lightly to coat
4 - mound 1/8 peach mixture onto the center of each pie crustlet (lets just go with that word shall we)
5 - fold edges of crustlet over the peach mixture and crimp to secure (it is now a tartlet)


6 - mix brown and white sugar together
7 - sprinkle 1 teaspoon of sugar mixture over each tartlet
8 - bake on 350 for 12-15 minutes or until crust is golden


I also made some plain raspberry and peach berry ones -
I added a bit more sugar (extra 1/2 teaspoon per tarlet) to the raspberry ones to make up for their tartness

Oooh, these look so, so good! I'd forgotten about tarts. My mom used to save leftover pieces of pie crust in the freezer. When she had fresh fruit that needed to be used, she'd pull out the crust and make little tarts for us. My favorite were always raspberry.
