Meat Stuffed Hungarian Sweet Peppers

I love when the first Hungarian sweet peppers arrive at the Farmer's Market.  They're a delicate pepper that tastes great in a salad or simply raw. 


But my hands-down favorite preperation is to stuff them...with veggies...or chicken...or chicken & veggies...  But last night Hubbers wanted something with ground meat and I just couldn't take another hamburger (I need a break after all the 4th of July BBQs last weekend!)  So this tasty variation of the stuffed sweet pepper was born.




Meat Stuffed Hungarian Sweet Peppers


1 pound ground meat
5 Hungarian sweet peppers
1 red onion, diced
5-6 mushrooms, diced (I used baby bellas, but buttons are just as tasty here)
1 tablespoon minced garlic
2 oz cream cheese, cubed
1/2 cup grated parmesan
1 cup grated fiesta cheese (or colby jack...or monteray jack...or pepperjack...or lumberjack)
2 tablespoons Worsteshire sauce
5-6 dashes tabasco sauce (or to taste)
1/2 teaspoon crushed red pepper flakes (or to taste)
1 tablespoon breadcrumbs (or cracker crumbs)
1 tablespoon olive oil


1 - Slice peppers in half longways and remove seeds & membranes
2 - Dice one pepper half and set the other 9 halves aside to be stuffed
3 - Heat olive oil over medium-high heat
4 - Add ground meat and cook until meat is starting to brown
5 - Add onions, mushrooms, and diced pepper half and cook for 2 minutes
6 - Add garlic, Worstechershire sauce, tabasco and red pepper flakes and continue to cook until veggies are soft and onions are translucent (about 5-7 minutes)
7 - Add cream cheese and mix thoroughly to combine
8 - Turn off the heat
9 - Add parmesan cheese and stir to combine
10 - Add shredded jack cheese of choice and stir to combine
11 - Stuff each pepper half with approximately 1 1/2 tablespoons of stuffing (obviously this will vary by pepper)
12 - Sprinkle each pepper lightly with bread crumbs
12 - Grill the peppers over a medium flame until the peppers are browned (about 5-7 minutes)



They're pretty hearty (and cheesy) but such a nice alternative to another burger :)

OOH! Those look delicious! My mom has an overabundance of banana peppers this year. I wonder how they would taste stuffed? I may have to try it!
