Cranberry-Nut Muffins (or Mini Loaves)

Between Halloween and Christmas, I make these tasty, festive muffins more times than I can count.  They're a great breafast treat or afternoon snack, and adding a tub of cream cheese makes them a nice snack for drop-in guests.

Cranberry Nut Muffins/Mini Loaves


2 cups all purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
3/4 cup brown sugar
1 egg
1 cup milk, beaten
1/4 cup butter, melted
1 1/2 cups cranberries

3/4 cup nuts of your choice (I usually use pecans or walnuts)

Streusel Topping
2 tablespoons flour
5 tablespoons brown sugar
1/2 teaspoon cinnamon
2 tablespoons butter, diced


1 - Preheat oven to 400 degrees F
2 - Mix together the flour, salt, baking powder and sugar
3 - Add milk and melted butter to the beaten egg (make sure the butter has cooled!)
4 - Pour the wet ingredients into the dry ingredients and mix quickly with a fork until moistened
5 - Pour the batter into a greased muffin or mini loaf tin
6 - Mix the flour, brown sugar and cinnamon for the streusel topping
7 - Cut in the 2 tablespoons butter with fork or pastry blender until mixture resembles course crumbs
8 - Top each muffin/mini loaf with streusel topping
9 - Bake muffins for 25 minutes and mini loaves 35-40 minutes until golden

This recipe yields about a dozen muffins or 5 mini loaves
