Steeler Reuben
3 pounds Smoked Sausage or Kielbasa, cut on the diagonal (longways) in 1/2 inch widths
1 jar/can sauerkraut, drained and rinsed
1 large sweet onion, sliced thin
1 pound Swiss cheese
Thousand Island dressing
Soft sandwich rolls, your favorite kind
In a large skillet, heat the sauerkraut and onion over medium-high heat until mixture starts to lightly brown, remove from heat and set aside
In a second skillet, saute the sausage until lightly browned (you may need to do this in a few batches)
Heat a large griddle to medium heat (around 300 degrees)Assemble individual piles of sandwich filling on the griddle like this
- add pile of sausage
- top with 1/2 cup or so of sauerkraut mixture- add approximately 2 tablespoons thousand island dressing
- top with 2 slices Swiss cheese
When Swiss cheese is melted, slide each sandwich filling onto its bun
Sit back and enjoy some stick-to-your-ribs football food!
