Yummy Pizza Quick Bread

As I was reading my 5 million favorite blogs last week, I stumbled upon this awesome recipe from Picky Palate.  It looked like a fun departure from regular old pizza so I gave it a try last night.  In my typical fashion, I made a few adjustments...I added some onion and green pepper... and some garlic powder and red pepper flakes... and I switched up the cheese a bit...and I substituted some fire roasted canned tomatoes for the sauce.  We ate this yummolicious bread with a nice big salad and it was soooo good.  Hubs has already requested it as an appetizer at our next party :)

Yummy Pizza Quick Bread

1 cup all purpose flour
1 1/2 teaspoons baking powder

1/4 teaspoon baking soda

1/4 teaspoon kosher salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon red pepper flakes
2 eggs
2 tablespoons olive oil
3/4 cup buttermilk
1/4 cup parmesan cheese, grated
3/4 cup sharp cheddar cheese, grated
1/2 cup mozarella, grated
1/4 cup grated parmesan cheese (green can variety)
3/4 cup pepperoni, diced
1/4 cup onion, diced fine
2 tablespoons green pepper, diced fine
1/2 cup fire roasted canned tomatoes, drained well
1 teaspoon Italian seasoning
1/4 cup parmesan cheese, grated

1 -  Preheat oven to 350 degrees and spray small bread pan with non-stick cooking spray (I used 2 super small foil bread pans)

2 - Combine flour, baking powder, baking soda, salt and pepper into a  large bowl

3 - Slowly add eggs, buttermilk and oil, mixing with a mixer until combined well

4 - Add onion, pepper, pepperoni, garlic powder, pepper, red pepper flake and cheese (except for the extra 1/4 cup parmesan) and mix until just combined

5 - Pour 1/2 batter into your prepared pan(s)

6 - Top evenly with tomatoes

7 - Spread the remaining 1/2 of the batter on top of the tomatoes

8 - Sprinkly Italian seasoning and parmesan cheese on the top of (each) loaf

9 - Bake for 45-55 minutes (until a toothpick comes out clean)

10 - Let sit, in the pan, at room temperature for 30 minutes

11 - Remove from pan and slice
