A Wee-Bit of Leprechaun Fun

Happy St Paddy's Day! Sadly, I didn't get any St Paddy crafts or decorations done (there's always next year!) But I was able to pull off a few fun treats like White Chocolate Shamrock Corn and a green themed lunch for munchkin:



White Chocolate Shamrock Corn

2 cups lightly salted popped popcorn (I use the brown paper bag method, but regular microwave popcorn would work just as well)
1/4 cup white chocolate chips
1 teaspoon of green granulated decorating sugar

  1. Melt white chocolate chips in the microwave - microwave on high for 30 seconds then remove and stir, continue heating in 30 second increments until melted smooth
  2. Quickly stir in green sugar and pour over popped popcorn
  3. Toss to coat

And here's our green themed leprechaun lunch:
Tortellini w/ peas tossed in a roasted red pepper vinnagrette (schmantzy Italian dressing),
cucumbers w/ dip, kiwi and melon fusion Jello Jigglers
